git is a missing make dependency.

The user creation and handling might be better handled in a systemd-sysusers and a systemd-tmpfiles file.

You want to use $srcdir here - and include them into the source array:

==> Starting package_aquatic-udp()...
install: cannot stat '../aquatic-udp.service': No such file or directory
==> ERROR: A failure occurred in package_aquatic-udp().

Variable paths aren't quoted so if a path contains spaces your PKGBUILD will fail.

The config files will be overwritten on an update.

There are some major flaws in this PKGBUILD - please revisit:

The name of all these split packages should be suffixed with -git.
