Kill manually freetype2-* from aur and install one from extra.
Fontconfig issue you should report to fontconfig-ubuntu maintainer

When I try to build it with pacaur, the build fails.

Contacted maintainer of fontconfig-ubuntu and proposed to set dependency to "freetype2" there. He updated PKGBUILD already.
Today I killed freetype2-ubuntu package, so you should use:
extra/freetype2
aur/fontconfig-ubuntu
aur/cairo-ubuntu

I'm getting the same error as spacepluk. It looks like the fontconfig-ubuntu PKGBUILD has been modified to depend on freetype2 instead of freetype2-ubuntu as el_aur has mentioned.

I tried building fontconfig-ubuntu and got the same linking error as in spacepluk's gist. I am reluctant to remove and of these AUR packages at this stage as I can't seem to build any of them... Do I need to install freetype2 which will remove freetype2-ubuntu in order to fix this? If this is correct, what now is the recommended installation stack?

The cairo-ubuntu PKGBUILD says:
"freetype2-ubuntu fontconfig-ubuntu libxft-ubuntu cairo-ubuntu"

The fontconfig-ubuntu PKGBUILD says:
"freetype2-ubuntu → fontconfig-ubuntu → cairo-ubuntu"

And, the freetype2-ubuntu PKGBUILD says:
"freetype2-ubuntu fontconfig-ubuntu libxft cairo-ubuntu".

I'm getting really confused here.

Tried to build and got same error.
related to 2.7 freetype compat issue. Patch fontconfig-ubuntu to depend on freetype2 instead of freetype2-ubuntu.
