Still having an issue when running this package out of the box. The fix until I determine how to do this in the AUR PKGBUILD is to
chown -R YOUR-USERNAME:YOUR-USERNAME /usr/share/deroso that the dero daemon can write to it. I've opened this Github issue to ask for a CLI option to specify where the log file is written to.
