A new option in Dosbox-x-0.83.11 provides the same behaviour:
"Added the "disable graphical splash" config option in [dosbox] section which when set will cause a text-mode BIOS splash screen to be always displayed at startup instead of the graphical one. If the TrueType font (TTF) output is enabled the text- mode BIOS screen is used automatically. (Wengier)"
