Doesn't seem like anyone's provided any particular documentation supporting the assertion that "it's the way things should be done". But yes, it's easy to implement, and I've upgraded the PKGBUILD.

I see that that's the way font config processing is generally done in the "official" pacakges. But for a quick little AUR one-off like this, that probably doesn't affect too many people (I don't know how many people actually even use ttf-ms-fonts) I was thinking the symlink was overkill and so not needed.

Do you feel that there's a strong case for using it?

Could you change a directory, from /etc/fonts/conf.d/ to /etc/fonts/conf.avail and add symlink to proper?
