ararhoo, There are two reasons: 1. Other packages are built like this. 2. GRUB takes and places needed directory and files itself, so it is not necessary to place files in /boot. Also, In UEFI systems /boot directory can be limited in size.

Hey, quick question:

Why not directly install it to /boot/grub/themes/ instead?

If this is no good, pls let me know why :)
