Consider integrating pdxleif's contributions. Running unprivileged is definitely the way to go IMO.

For serious use, this really should be run as a non-root user. I made an install script that adds an unprivileged "jetty" user at https://gist.github.com/1257261. I also added the setuid config, because I wanted to bind to port 80 as root then switch to the jetty user, but you could also do something like "su -c 'java -jar start.jar' jetty" in rc.jetty to run as the jetty user.
