After installing, the easiest way to get up and running with this package is to run:
minecraft-bedrock setup --bubbles
This will setup a new wine prefix, download and install prerequisites along with the game (leveraging bubbles-wow/mcbe-gdk-unpack-archive), and add it to Steam as a Non-Steam Game.
However, you do not need to be running Steam to launch the game. You can simply run:
minecraft-bedrock launch
