Some of the Makefiles in the subdirectories for each plugin are kinda broken, inn that they don't use INSTALL_PATH. But they support the usual DESTDIR and PREFIX variables. But since the top-level Makefile doesn't pass those, you have to pass them via the environment. The Makefiles supporting INSTALL_PATH also support DESTDIR.

In short, this installation command should work for all:

make install DESTDIR=$pkgdir PREFIX=/usr INSTALL_PATH="/usr/lib/lv2"

Otherwise the install target of some plugins will try to install to /lib/lv2, which will of course not work (but the make install command does not abort) and so these plugins will not be packaged.
