Update: Actually just rename gtk-dark.css to gtk.css, don't change the 'contained' one. I duplicated the 'NewAdwaita' dir to 'NewAdwaita-dark' and swapped the gtk.css around so I could install both side-by-side. This also mirrors how the Adwaita theme itself is handled by the main 'gnome-themes-extra' package, with a separate directory for Dark.

Global Dark Theme was removed from Tweaks with 3.30. To change to it in 3.30 now you have to rename gtk-dark and gtk-contained-dark to remove the '-dark' from their filenames.
