v1.1.1 fixed the ruby version pinning so the package now works with ruby >= 3.0

I corrected the pkgbuild so it builds the gem from source and updated it to the latest version.

Unfortunately this only works if you have ruby-git installed because it depends on ruby>=3.1 and the ruby package in extra is still on 3.0.6 hasn't been updated since last July. It's already flagged as out-of-date.

This needs to build from source. Binary packages should be submitted with a -bin extension; i.e.,sugarjar-bin
