Please use provides=("v2ray=${pkgver%%.r*}") because some packages related to v2ray may depend on a specific version of v2ray (>=5 or < 5).

Also bumped to v4.28.x, please note that in v4.27 there was a breaking change:

Breaking Change

VMessAEAD has been updated and needs both client and server to be the same version for it to work.

Because of this breaking change, if your Arch is the "server" and if your "client" hasn't been updated to v4.27 or above, you can temporarily uninstall this git version and install v4.26 on your server from the Arch repo: sudo pacman -U https://archive.archlinux.org/packages/v/v2ray/v2ray-4.26.0-1-x86_64.pkg.tar.zst
