With systemd, it's usually preferred (and simpler) to have daemons non forking, so you can remove the GuessMainPID and Type lines, and the -d from the end of the command.

The service file runs Watcher as root! Why not use the provided one and create the watcher user? https://github.com/nosmokingbandit/watcher/blob/master/run%20scripts/systemd.init
