This package shouldn't provide wine-ge-custom, it doesn't even provide a wine command. It should provide wine-ge-custom-opt if anything

Why does this conflict and/or replaces wine-ge-custom? It is not a drop-in replacement for either wine, wine-staging or wine-ge-custom. Also why does this package exist since the binaries require lutris's runtime?

As for the PKGBUILD itself, you should probably use the noextract option, and extract the sources directly into the destination directory in the package step instead of copying them using wildcards.

Have you tested in a clean chroot? And what app are you having issues with?
