Ok, but now it works. If anyone can make a more automated and simple way with one PKGBUILD file, that would be good for the Arch Linux community.

@cmt101 Making the .desktop file and installing the icon were never an issue, the issue was with making the game launch properly that way, running the executable worked fine.

Either way I can't make this work at all anymore, I already beat the game half a year ago and I've lost interest. Disowning.

In substitution of the commented lines in the PKGBUILD file:

Launching via .desktop file just hangs, I give up.
install -Dm644 -t "$pkgdir/usr/share/applications" "${pkgname#gog-}.desktop"
install -Dm644 data/noarch/support/icon.png "${pkgdir}/usr/share/pixmaps/${pkgname#gog-}.png"

add:

install -D -m644 -t "${pkgdir}/usr/share/applications/" meta/xdg-utils/beneath-a-steel-sky.desktop
for i in 16 24 32 48 64 128 256 512; do
install -D -m644 -t "${pkgdir}/usr/share/icons/hicolor/${i}x$i/apps/" data/noarch/support/beneath-a-steel-sky.png
done

but you will have to rename icon.png to beneath-a-steel-sky.png and create your own desktop file, after you made a 1st extraction with the original PKGBUILD file and downloaded the beneath_a_steel_sky_en_gog_2_20150.sh from the official url.
