I feel really stupid, but I seem unable to get my drives cache drives to automatically attach to my backer drives on boot, am I missing something here? I have to do it manually on every boot (`echo 'CACHE-ID' > /sys/block/sdd/ssd5/bcache/attach`).

That sounds like something you should probably post to g2p's bcache-tools page as an issue or a merge request. Or failing that as an extra note on the archwiki about it as an extra way to view bcache stats.
