I haven't changed them since I took over maintenance of the package, but the makedeps could use a bit of pruning. In terms of actual dependencies though, this package is on-par with the binary package.
Feel free to try building without the packages you mentioned if you like. If you could let me know your findings, that'd be a big help. I'll see if I can find the time to run my own checks.

How come this package comes with so many dependencies compared to the binary package? I do understand some tools for compiling and such. But what about gstreamer, libnotify, unzip etc?

As a quick fix I adapted the package as palemoon-infinality based on https://github.com/bohoomil/fontconfig-ultimate/issues/90

You can try disabling the skia graphics engine by adding 'ac_add_options --disable-skia' to mozconfig.in, it builds then, and I haven't noticed any problems so far (fonts look a little more blurry, but I'm not sure if I'm just imaging that).
The better option is to report this as a bug to the infinality dev(s).
